Lecithin, En-Place, 300g
- Made from soy, lecithin is a natural emulsifier (lecithin is the emulsifier that keeps chocolate and cocoa butter in a chocolate bar from separating). It is very soluble in aqueous solutions and is an ideal stabilizer for foams and airs. The proteins of lecithin make emulsions of otherwise incompatible solutions possible.
