Barbary duck is the main type of roasting duck produced in France. It originates from South America.
It is mainly reared for meat production. The plumage of this species is white. The male can easily be differentiated from the female as it is twice as heavy. Barbary duck is reputed for its yield and the quality of its meat (filet, breast) and for its distinctive flavour.
The production of Barbary duck is of a high quality. The slaughtering age (around 3 months) had not deceased over the past 30 years of development in aviculture.
Fry for 15 mins or cook in a preheated oven at 200°C for 20 mins.
