• The most highly prized of mushrooms. They need careful washing as grit is often hiding in the heads but require only a few minutes of soaking. Their beautiful appearance means they are often left whole and the rich smoky flavour works well in omelettes and cream sauces served with chicken fish or pasta.

• Soak for 20 minutes before using.

• Heat-sealed bags.
