- Pressed uncooked cow's milk.
- The crust of the Tomme de Savoie is dark gray to light gray, speckled flowers. It may be slightly troubled.
- The dough is white to yellow, with small openings molding. Its texture is both flexible and strong: the real Tomme de Savoie is never runny or chalky.
- Franc, delicate aromas and subtle. Its taste varies ripening time and the seasons. Tomme is more younger, its taste is sweet, with a hint of acidity, it is more refined, more taste is distinctive, powerful, rustic (sometimes with a slight hint of bitterness).
