Handmade on the Maher’s family farm in the heart of Tipperary, Ireland. The family has over 25 years’ experience in cheesemaking. Handmade exclusively using the milk from the Maher’s family own Friesian dairy herd. This animals are grass-fed and enjoy the lush green pastures of Tipperary. Ale washed soft cheese created using a local craft ale from White Gypsy. Ruby has a soft velvety texture, smooth on the palate and oozes with a distinct malt flavour. It has an earthy aroma with a pleasant after-taste which lingers on the palate. Available in 200g, and 1.7kg wheel; it’s a highly versatile cheese for both retail and food service markets. Shelf life of 200g is 4 weeks while shelf life of 1.7kg 4-6weeks
