With such a long tradition of artisan cheesemaking, we created the first Irish blue cheese, Ballyblue, and the first smoked brie in Europe, Ballyoak. We believe cheesemaking is an artform that relies on two things: the quality and purity of the creamy milk from local farms, and the skill and passion of our artisan cheesemaking. We firmly believe that it’s this human interaction with the cheese that gives it its unique character note.
